If you want a mixed berry pie, then this one is for you. This is a simple, no problem delicious berry pie that can be made from frozen berries. Fresh berries work too if they are in season.
Razzle Dazzle Berry Pie
Ingredients
- 2 blackberries (fresh or thawed frozen)
- 2 cups raspberries (fresh or thawed frozen)
- 1/2 teaspoon lemon zest
- 2 teaspoons fresh lemon juice
- 2 tablespoons tapioca flour
- 1/2 cup granulated sugar
- 3 tablespoons light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 all-butter pie crust (4 - 6 mini pies)
Directions
1. | Preheat the oven to 400 F. Use the center rack of the oven. Spray nonstick or butter the muffin cups. |
2. | Using a large bowl, mix together the blackberries, raspberries lemon zest and juice. |
3. | Using another bowl mixed the dry ingredients: cornstarch, tapioca, sugar, brown sugar, cinnamon and salt. |
4. | Pour the dry ingredients into the berries and tossed gently. |
5. | Cut 8 6-inch circles from the pie crust dough. |
6. | Place each dough circle into a muffin cup. |
7. | Spoon the filling into each mini pie shell but not to the very top to prevent boiling over. |
8. | Bake for 5 minutes and reduce oven to 375 F. |
9. | Bake for 20 to 25 minutes more or until the crust is golden brown and the filling is bubbling. |
