Razzle Dazzle Berry Pie

If you want a mixed berry pie, then this one is for you. This is a simple, no problem delicious berry pie that can be made from frozen berries. Fresh berries work too if they are in season.


Razzle Dazzle Berry Pie

Ingredients

  • 2 blackberries (fresh or thawed frozen)
  • 2 cups raspberries (fresh or thawed frozen)
  • 1/2 teaspoon lemon zest
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons tapioca flour
  • 1/2 cup granulated sugar
  • 3 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 all-butter pie crust (4 - 6 mini pies)

Directions

1. Preheat the oven to 400 F. Use the center rack of the oven. Spray nonstick or butter the muffin cups.
2. Using a large bowl, mix together the blackberries, raspberries lemon zest and juice.
3. Using another bowl mixed the dry ingredients: cornstarch, tapioca, sugar, brown sugar, cinnamon and salt.
4. Pour the dry ingredients into the berries and tossed gently.
5. Cut 8 6-inch circles from the pie crust dough.
6. Place each dough circle into a muffin cup.
7. Spoon the filling into each mini pie shell but not to the very top to prevent boiling over.
8. Bake for 5 minutes and reduce oven to 375 F.
9. Bake for 20 to 25 minutes more or until the crust is golden brown and the filling is bubbling.
